Fudgy Mint Chocolate Chip Cookies

Mint chocolate chip

These aren’t the prettiest cookies in the world, but they taste pretty amazing…which is good enough for me.  If you read my blog, you know I’m not a photographer – but this picture is probably one of my worst due to the Chinette plate these guys are resting on.  Sorry about that.

I had to snap a photo before they disappeared – no time for styling or trying to wait for good light (not that I do that anyway)…but you get the point.  These cookies aren’t about looks – they are all about taste!

White Turtle Cookies

I hope the holiday season is treating everyone well!  I made these white turtle cookies for the Thanksgiving potluck we had at work a few weeks ago.  Um, yeah.  I know, it’s been a few weeks and I’ve been a real slacker with the posts lately.  Other than this batch, I haven’t been doing a lot of baking lately.  We had a really small Thanksgiving this year – so no need to go crazy with the cooking.  I was also training for and finished my second half marathon on Thanksgiving morning (woohoo!!).  Combine that with work, a toddler, and life in general and my mixer has been on a short hiatus.

Monster Mash Cookies

Monster Mash cookies with AND without the candy corn topper.

I’ve had this recipe idea in my head for the past year!  Last fall, I picked up a container of trail mix from my local Fresh Market that included salted peanuts, golden raisins, and candy corn.  There may or may not have been white chocolate or peanut butter chips in it – that part, I’m fuzzy on.  However, my memory is 100% clear that this was one heck of a delicious salty/sweet combination!

Phone Homers (Chocolate Reese’s Pieces Cookies)

I was nine years old when E.T. made its way to the movie screen in 1982.  As a kid, it was the first movie that I remember being completely emotionally wrapped up in the story – probably because I was about the same age as the main character, Elliott.  That summer, E.T. was literally EVERYWHERE…fast food cups, dolls, toys, clothing – even underwear (don’t get me started on that one).  My brother and I both dressed up as E.T. for Halloween that year in hand-sewn costumes my mom made for us…they were fabulous, but I’m pretty sure mom came close to having a nervous breakdown putting the darn things together. Peaches N’ Cream Snack Cake

So, I’m preeeeeetttty sure that snack cake isn’t exactly what Steve Miller was singing about in those lyrics.  What I do know for sure is that peaches (especially here in the peach state!) are at their prime right now…and your taste buds WILL have a good time when you bake up this yummy cake!

Key Lime Cookies

It’s the dog days of summer (not sure what that actually means).  Whatever, it’s stinkin’ hot out there.  I’d wager that wherever you live in America, most folks are ready for summer 2012 to wrap on up and move along.  It’ll be quite some time before we see significantly cooler weather here in the South, but I’m hoping for a few breaks here and there signaling that fall (and football!) is on its way.  A girl can dream, right?!

Until then, here’s a recipe for a summer-y cookie that has a nice light flavor…and in my opinion, looks kinda pretty to boot.

Sunflower Cookies

While at the grocery store, I threw my usual container of almonds into the cart (one of my go-to snacks!) but also noticed a small jar of shelled sunflower seeds on the shelf above.  I hadn’t had any of those in ages and I thought they might make for a nice topping on salads…so, they got thrown in the cart, too.

What is it they say about good intentions? Or the best-laid plans?  Well, rather than putting those healthy little sunflower seeds on top of a salad, I got home and decided that their fate might be more fun (and tasty!) if they were baked into a cookie.  I know, I know.  Shocking, right?  Ummmmmm, yeah.  Not so much.

Mini Salted Chocolate Caramel Cookies

Well, hello there Rolo Minis – it’s a pleasure to meet you!  Oh, what’s that?  I don’t have to unwrap each individual candy…yes, please.

Normally, unwrapping a piece of candy isn’t exactly something that breaks a sweat – but unwrapping candy for baking is slightly annoying – despite the delicious pay off.  Enter these awesome little bags of candy that seem to be popping up on my store’s shelf.  I wonder if these were made with the “baker” in mind or just the folks who like tiny food (and dislike wrappers).  Sounds like a marketing question better left for another time.
