I know, I know.  It’s been a ridiculously long time since my last post.  Life has been a bit crazy…but chock full of great stuff like a vacation in Mexico and completing my first half-marathon with Team in Training (TNT)!  Can’t complain.

As part of my half-marathon training with TNT, I pledged to raise a minimum of $1,000 for the Leukemia and Lymphoma Society.  I raised just over $1,300 thanks to my fabulous family, friends and co-workers.  One of my fundraising tactics was to supply one dozen homemade cookies to each donor that gave a $10 minimum.  Needless to say, I’ve been a baking machine.

What does this mean?  Well, ror the past month or so, I haven’t been experimenting with too many new recipes as I’ve been too busy baking my donors’ favorites like these:  Banoffee cookies (banana + toffee bits = cookie nirvana).

So, now that both my half-marathon and my baking marathon are complete, I am headed back into the kitchen to play with new recipes.  Inspired by an upcoming trip to Las Vegas, I created what I call “All-In’s”.  Just like when you’re at the betting table and you decide to put all your chips in…

…well, I decided to put every baking chip I could find (chocolate, white chocolate, butterscotch, and peanut butter) into this recipe.

The best part:  these cookies are not nearly as risky as gambling and quite frankly, the pay-off is guaranteed.  Ka-ching!! Personally, I don’t gamble.  It’s not that I’m morally opposed to it – I just get queasy watching my money evaporate while simultaneously thinking of the amazing pair of shoes I could’ve bought instead.

I leave the gambling to my hubs while in Vegas.  Me?  I prefer to gamble with recipes…the odds are much higher in my favor while in my kitchen.

So, whether you’re betting on the basketball tourney or blackjack this month, put all your chips on the table (and into your mixing bowl) and give these cookies a try!  They may not make you rich but they sure do taste like one MILLION dollars!

“All-In” Chip Cookies

  • 2 1/4 c. flour
  • 1 tsp. baking soda
  • 1 c. unsalted butter, softened
  • 3/4 c. brown sugar
  • 1/4 c. sugar
  • 1 (3oz.) package instant vanilla pudding mix
  • 2 eggs
  • 1 tsp. vanilla
  • 1 c. chocolate chips (I used milk chocolate chips)
  • 1 c. white chocolate chips
  • 1 c. butterscotch chips
  • 1 c. peanut butter chips

Preheat oven to 350°.

Combine the flour and baking soda and set aside.

In a large bowl, cream together the butter and sugars.  Beat in the instant pudding mix until blended.  Stir in the eggs and vanilla.

Add the flour mixture.

Stir in the chocolate, white chocolate, butterscotch, and peanut butter chips.

Using rounded spoonfuls, place the dough balls onto cookie sheets that are lined with parchment paper or a silpat liner.

Bake 10-12 minutes until edges are golden brown.  They may still look a little under-done.  That’s okay, they’ll keep cooking on the tray as they cool.  Once they are comfortable to touch, transfer to a cooling rack.
